José utilizes the region's flat topography and consistent climate to master the Natural Process, meticulously drying the cherries in the sun to allow the sugars to soak into the bean. This careful stewardship at the Salgar subregion results in a sophisticated, uniform cup that represents the best of modern Brazilian sustainable farming.
